Easter breakfast was always something to look forward to house. Before any of the chocolate was had, or before anyone was out of their pjs we’d all sit around the kitchen table and my mum would work her magic and make sure everyone had their preferred hot cross buns! (usually home made). Sometimes we were super lucky and got pancakes too! Today I’m going to share with you my perfect Easter breakfast!
Firstly here is the recipe for Pikelets (just like pancakes but imo better)
Ingredients:
1egg
1/2 cup milk
4Tbs sugar
1/4 Tsp bicarb soda
1 cup S/R flour
1Tbs butter (melted)
Method:
Disolve bicarb soda in milk. Whisk/beat egg and sugar together until combined. Alternately add four and milk-bicarb into egg/sugar and whisk until its all mixed together and a good consistency – not too runny, not too thick! Melt some butter in a pan and start to spoon the mix in the hot pan! When the bubbles begin to form and ‘pop’ around the outside of the mixture, you know its time to flip it!
For the hot cross buns, serve them how you like them! I prefer to cut them in half and toast them!
Serve with whipped cream, jam, honey, berries, nutella… ANYTHING! DELICIOUS!
This is a great breakfast to share with friends and family!
